Miranda Wallace is the owner and operator of Gluten-Freedom Bakery located in Victoria, TX. Since being diagnosed with celiac disease in May of 2011, Miranda has set out to create wonderfully tasting gluten-free treats for every home. Gluten-Freedom Bakery was established in April of 2014 and opened for business May 10th, 2014 at Goliad Market Days. Gluten-Freedom Bakery has since become a regular vendor at the Downtown Farmers’ Market in Victoria, offering a variety of treats including muffins, breads, cookies, cakes, cupcakes, pizza crust, pie crust and much more. In addition, the bakery now offers dairy-free and soy-free products.
Gluten-Freedom Bakery operates under the Texas Cottage Law, which allows the products to be baked out of a home kitchen but prohibits the selling of products which require temperature control, such as custards, meringue, etc. Miranda has plans to one day grow Gluten-Freedom Bakery into a storefront bistro-style location offering lunch specials and more allergy-free products, but until then you can find Gluten-Freedom Bakery at the Downtown Farmers’ Market or place a special order (minimum 72 hour notice, as all products are baked fresh to order).
